Our olive harvest starts at the end of October and is usually finished at the end of November/beginning of December. At this time, the olives are not yet fully ripe and the oil yield is low. As is the case for any progressive quality farm, it goes without saying that only semi-ripe, clean, healthy olives are used and fruit that is already on the ground is left lying around.
Vineyard replanted
We have been making wine "already" since 2012. The vineyards for this were or are leased and already planted with vines. One of these vineyards, with a size of half a hectare (= 5,000 m2), will be cleared after the harvest in autumn 2016. Too many canes are missing in this vineyard planted with Bacchus and, moreover, with a row width of just under 180 cm, the plant is almost too narrow for the new machines.
